Bikini Recipe
Makes enough for 10 guests
To make the Citrus Syrup (yields 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g granulated sugar
For the Drink (produces 850ml, serving 10)
400ml good quality vodka
100ml London dry gin
150ml peach schnapps
200ml clementine syrup (from the recipe above)
Fresh cranberries, for garnish
Mandarin essential oil, for finishing
Directions
To prepare the Syrup: Place the listed ingredients in a pan, bring to a simmer, mixing to dissolve. Next, take off the heat and leave to cool down entirely. Transfer into a clean bottle, seal keeping it chilled, where it will keep for up to one month.
For the Batch Mix: Pour all the spirits and syrup into one large bottle, leave to sit for an hour, then pass it through preferably using cheesecloth, to ensure it's completely strained.
To serve: Add 85ml of your cocktail base to a stirring glass packed with ice, and stir gently for about 60 seconds until cold. Pour to a cold coupe glass or a similar vessel, top with the cranberries adding the final touch by giving it a quick spritz of the essential oil over the drink.
